Thanksgiving Dinner Inspiration- Tofu Meatloaf
What is your favorite Holiday meal during Thanksgiving? Today we want to share one simple recipe made by using Nature’s Soy Firm Tofu. Meatloaf is a traditional dish that can be enjoyed throughout the year but is more common in the cooler months. Each country has its own unique tastes and practices of this recipe. This dish can be considered one of the typical comfort foods during the holiday season. Today, we want to make this traditional dish a little bit different by replacing the meat part.
Tofu Meatloaf
This Tofu Meatloaf recipe contains protein and veggies that provide nutrition in one meal. Nature’s Soy Firm Tofu adds more texture to this warm meal and is perfect for baking and frying.
You will need:
1 package Nature’s Soy Firm Tofu
1 1/2cups panko bread crumbs
1/4 cup freshly chopped parsley
1 medium carrot, peeled and finely chopped
2 stalks of celery, finely chopped
1 small yellow onion, finely chopped
1/2 cup finely chopped baby Bella mushrooms
For the sauce (mixed well together):
2 1/2 tbsp low-sodium soy sauce
2 tbsp Worcestershire sauce
2/3 cup ketchup
2/3 cup barbecue sauce
1/2 tsp smoked paprika
sea salt and freshly ground black pepper
How to make:
Preheat oven to 400ºF and line loaf pan with parchment paper. In a medium skillet over medium heat, heat oil. Add onion, celery, carrot, and mushrooms, stirring until vegetables are soft, 6 to 8 minutes. Using a potato masher in a large bowl, mash the Firm Tofu until rough paste forms. Add cooked vegetables, breadcrumbs, and mixed sauce to the bowl with tofu. Reserve extra mixture for the top. Transfer mixture to prepared loaf pan, smooth top, and bake for 30 minutes. Remove from oven, brush with remaining ketchup mixture, and bake 20 minutes more and enjoy!
