Tofu Purple Sweet Potato Pie
Ingredients:
1 (9inch) deep-dish premade pie crust
2 medium purple sweet potatoes
1 ¼ cup Nature’s Soy Silken Tofu
1.5 tbsp butter
2 eggs
1 tbsp coconut sugar
1 tbsp vanilla extract
1 cup coconut cream
½ cup maple syrup
1 tsp ground cinnamon
1 tsp ground nutmeg
Please change to cup measurement since other ingredients reference cup.
Directions:
Preheat oven to 350F°
Follow the directions on the pie crust packaging and bake for 10 minutes.
Prepare a medium pot with water and bring to a boil. Add peeled and cut sweet potatoes. Boil for 20 minutes until the sweet potatoes are tender. Wait until the sweet potatoes cool down, then add them to a food processor with butter. Prepare a medium mixing bowl and combine the coconut cream, coconut sugar, eggs, vanilla extract, maple syrup, and all the spices and whisk until combined. Add the cream mixture to the food processor and process with sweet potatoes until smooth and well combined.
Pour the pie filling into the crust and bake for 60 minutes. Remove from the oven, place onto a metal rack to cool down for about 45 minutes, and place on a lovely plate that you prefer.
