Vegan Poke Bowl

Ingredients
  • 1 pack Nature’s Soy Firm tofu, drained, pressed & cubed to 1”
  • 1 tsp grated ginger
  • 1/4 cup soy sauce
  • 2 tsp sesame oil
  • 1 pinch red pepper flakes(optional)
  • 2 stalks green onions, finely chopped
  • 1 tsp fresh cilantro or parsley, finely chopped
  • 1 ripe avocado, cubed
  • 1/2 cup edamame beans
  • 2 tsp white sesame seeds
  • Base:
  • 1 1/2 cup steamed rice
  • 1 bunch of kale
Instructions

1. Place grated ginger, soy sauce, sesame oil and red pepper flakes into a bowl and whisk. Make sure all items are combined well, as the sesame oil will float to the top.
