Tofu Greek Style Salads

Ingredients
  • 1 pack Nature’s Soy Firm tofu, diced to 1”
  • 1/4 cup Olive oil, extra virgin, cold pressed
  • 2 tbs Red wine vinegar
  • 1 tsp Salt, 1/2 tsp sugar, 1/2 tsp basil, dry
  • 1-1/2 tsp Oregano, dry
  • 1/2 tsp Black pepper, ground
  • 1 tsp Lemon juice
  • 1/2 Red onion, chopped
  • 1/3 cup Black olives, canned
  • 1 pint Cherry tomato, split-half
  • 2 Cucumbers, medium size, peeled, sliced
  • 1 Romaine lettuce heart, torn to bite size
Instructions

1. In a large mixing bowl, gently mix all ingredients except onion, olives, tomato, cucumber and lettuce.
