Recipe -> Tofu Salad-1

1 cup frozen lima beans
1 cup frozen sweet corn
1/4 cup diced carrot
2 dried Shiitake mushroom, soaked, remove stem, diced
3 tbs finely chopped red onion
8 oz Nature Soy firm tofu, diced, rinsed, and drained
3 tbs Teriyaki sauce or marinade
2 tsp Sesame oil
blench lima beans, corn, carrot, and mushroom until tender.
Rinse with cold water.
Gently stir Teriyaki sauce and sesame oil with diced tofu
Let it marinade for about 15 minutes.
Gently stir in beans, corn, carrot and mushroom mixture.
Keep refrigerated before serving.
