Recipe -> Tofu Greek Style Salads

Yields
   
Ingredients:
1 pack Nature’s Soy Firm tofu, diced to ½”
1/4 cup Olive oil, extra virgin, cold pressed
2 tbs Red wine vinegar
1 tsp Salt, 1/2 tsp sugar, 1/2 tsp basil, dry
1-1/2 tsp Oregano, dry
1/2 tsp Black pepper, ground
1 tsp Lemon juice
1/2 Red onion, chopped
1/3 cup Black olives, canned
1 pint Cherry tomato, split-half
2 Cucumbers, medium size, peeled, sliced
1 Romaine lettuce heart, torn to bite size


 
Procedure:
In a large mixing bowl, gently mix all ingredients except onion, olives, tomato, cucumber and lettuce.
Let it marinade for about 1-2 hours.
Gently stir in the cucuber, olive and tomato prior to serving.
Toss with lettuce right before serving or lay lettuce on the serving plate and top with the marinaded tofu mix.
